The nose is fruit driven, young primary red berries and ripe apricot. On the mouth this has a fizzy freshness with a sherbet stone fruit flavour and a textured finish from skin contact. Grapes were hand harvested, destemmed, and left 5 days in concrete tank to capture this stunning colour and extract aromas and texture from the skins. Through this process the wine started a natural fermentation, it was then gently pressed and fermentation was completed in temperature controlled stainless tank and London Cru's modern egg tank. Malolactic fermentation was partially completed and the wine was then bottled in the classic Traditional method with a tirage of 24g/L of sugar to create the perfect fizz with the help of the yeast.
